Proctor gets Soul

Soul, a new restaurant above The Old House shop in the Proctor District, officially opens tomorrow at 11 a.m. after a week-long hiccup in last Friday’s planned kick-off.

Owner Natural Allah said the delay came after a final inspection by the health department. “They said they didn’t want a sink in that area, they wanted it somewhere else.”

So instead of customers streaming in and out this week, Allah has had plumbers.

But as Soul’s Facebook site excitedly proclaims: “We will officially & positively be open tomorrow morning @ 11 a.m. for business  We hope to see everybody there!”

The restaurant’s specialties will be Hispanic, Caribbean and American soul food, Allah said.

Chef Maria Torres – Chef Ri, Allah calls her – grew up in Puerto Rico. She’s putting some of her childhood favorites on the menu. Two specialties will be Pernil, which is Puerto-Rican style roasted pork, and Arroz Con Pollo.

American soul offerings will include fried catfish and red beans and rice.

Both Chef Ri and Allah, who also owns Vinum Coffee & Wine Lounge downtown, say they’re excited and that it’s been hard to wait patiently to open.

“We are ready to go,” Allah said. “We’re glad to be here. There are restaurants that have been here for decades. We’re new to Proctor, but we plan to be one of those.”
